here's the recipe my bois šŸ”½

9 eggs
1C cottage cheese 
1C shredded cheddar 
1/4tsp white pepper
1Tbsp cornstarch

GREASE THE muffin pan WELL
(or use muffin liners)
add your favorite toppings to it!
bake at 300 for 25-30minutes.
PS. i definitely meant to say COTTAGE CHEESE

Delicious! A tip for water baths: put the pan that the water will be poured into in the oven before preheating. Pour the boiling water in a little higher than you want it when you put the muffin tin or springform pan into it (to account for evaporation). Preheat your oven, then place the pan with the ingredients in. You will avoid spilling boiling hot water on your feet, kids, or pets while trying to transfer the whole thing into the oven.

I’ve been making something similar for my husband for his work/on the go breakfast for years.  I line the bottom w bacon, add 1 egg, so it cooks over easy, cheese, chives and bake. In the summer I even just use my toaster oven, so I don’t heat up my whole kitchen. But I absolutely love this take on it, and will be testing it soon!ā¤

I call these chat quiches ā˜ŗļø Cottage cheese works well too.
Buy you some Old El Paso Tortillas Flour Soft Taco Boats. Mix up 1-2 eggs with a tsp of cottage cheese, spinach, feta, & dill. Pop in your air fryer on 400⁰ for 10-15mins (depending on how hot yours gets & how well done you like your eggs) 
12 minutes is perfect in mine. Or the microwave, but this kills nutrients & moisture so if you have air fritter, use it instead šŸ˜‰
